Eastern Fattoush Bread Salad
A refreshing salad made with toasted pita bread, mixed greens, and a zesty dressing, inspired by the flavors of the Middle East. Serve chilled for a perfect side dish or light meal.
Ingredients
- β4-6 slices Pita Breadday-old or toasted
- β4 cups Mixed Greenssuch as lettuce, parsley, and mint
- β1/4 cup Eastern-Style Vinaigrettesee below for recipe
- β1/4 cup Chopped Fresh Parsleyoptional
- β1/4 cup Chopped Scallionsoptional

1. Preheat the oven to 350Β°F (175Β°C).

2. Cut the pita bread into 1-inch pieces and toast in the oven for 5-7 minutes, or until crispy.

3. In a large bowl, combine the mixed greens, toasted pita bread, and chopped parsley and scallions (if using).

4. In a small bowl, whisk together the Eastern-Style Vinaigrette ingredients.
