Caribbean Chickpea Bowl
A flavorful and nutritious bowl filled with chickpeas and a jamaican-inspired flavor profile.
Ingredients
- β1 cup, drained and rinsed chickpeas
- β1/4 cup coconut milk
- β2 tsp jamaican jerk seasoning
- β2 tbsp lime juice
- β1 cup aerated water
- β1 wheat-free bowl
- βto taste salt and pepper

1. Preheat the oven to 400Β°F (200Β°C).

2. In a large bowl, whisk together coconut milk, jamaican jerk seasoning, lime juice, and aerated water.

3. Add the chickpeas to the bowl and toss to coat with the marinade.

4. Transfer the chickpeas to a baking sheet lined with parchment paper.

5. Roast the chickpeas in the preheated oven for 20-25 minutes, or until lightly browned.

6. Meanwhile, toast the wheat-free bowl in the oven for 5-7 minutes, or until lightly browned.

7. To assemble the bowl, place toasted wheat-free bowl on a plate, then top with roasted chickpeas and additional jamaican jerk seasoning if desired.
