Spanish Coconut Croquetas
A crunchy and airy twist on traditional Spanish croquetas, this recipe combines the flavors of coconut and ham in a crispy fried ball.
Ingredients

- β1/2 cup Spanish Ham
- β1/4 cup All-Purpose Flour
- β1/2 cup Breadcrumbs
- β1 Large Egg
- β1/4 cup Chopped Onion
- β1/2 tsp Garlic Powder
- β1/4 tsp Salt
- β1 cup Vegetable Oil

Preheat the oil in a deep frying pan to 350Β°F.

In a medium bowl, mix together the coconut flakes, ham, flour, breadcrumbs, egg, onion, garlic powder, and salt.

Using your hands, shape the mixture into small balls, about 1 inch in diameter.

Once the oil is hot, carefully place the croquetas in the oil and fry for 2-3 minutes on each side, or until golden brown.
