Energizing Croatian Pilaf with Almond Crunch

- ●1 cup Croatian Pilaf Mix
- ●2 cups Vegetable Broth
- ●2 tablespoons Olive Oil
- ●1 medium, diced Onion
- ●2 cloves, minced Garlic
- ●1 medium, peeled and diced Carrots
- ●1 medium, diced Zucchini
- ●to taste Salt
- ●to taste Pepper

Heat the olive oil in a large saucepan over medium heat.

Add the diced onion and sauté until translucent, about 3-4 minutes.

Add the minced garlic and sauté for another minute.

Add the diced carrots and zucchini, and cook until they start to soften, about 4-5 minutes.

Add the pilaf mix and vegetable broth to the saucepan, and bring to a boil.

Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the liquid has been absorbed.
