Classic British Prune Scones
A traditional British recipe for sweet scones made with dried prunes.
Ingredients
- β1/2 cup prunesdried
- β2 cups all-purpose flour
- β1/4 cup granulated sugar
- β2 teaspoons baking powder
- β1/4 teaspoon salt
- β1/2 cup cold unsalted buttercut into small pieces
- β3/4 cup heavy cream

Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.

In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.

Add cold butter to the dry ingredients and use a pastry blender or your fingers to work it into the mixture until it resembles coarse crumbs.

Stir in dried prunes.

Pour in heavy cream and stir the mixture until it forms a dough.

Turn the dough out onto a floured surface and gently knead it a few times until it comes together.

Pat the dough into a circle that is about 1 inch (2.5 cm) thick.

Use a biscuit cutter or the rim of a glass to cut out scones. You should be able to get about 8-10 scones.

Place the scones on the prepared baking sheet, leaving about 1 inch (2.5 cm) of space between each scone.

Bake for 15-20 minutes, or until the scones are golden brown.

Remove the scones from the oven and let them cool on a wire rack for 5-10 minutes before serving.
