Aromatic Chicken Stew
A hearty and comforting stew made with tender chicken, aromatic spices, and fresh vegetables.
Ingredients
- β1 lb chicken breastcut into 1-inch pieces
- β1 tsp aromatic spices (e.g. thyme, rosemary, bay leaves)dried
- β2 large dutch potatoespeeled and cubed
- β2 medium carrotspeeled and sliced
- β1 stalk celerysliced
- β1 medium onionchopped
- βto taste salt
- βto taste pepper

Heat oil in a large pot over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Add the onion, carrots, and celery, and cook until the vegetables are tender, about 5 minutes.

Add the potatoes, aromatic spices, salt, and pepper, and stir to combine.

Pour in enough broth to cover the ingredients, and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
