Gigantes Plaki (Greek Giant Beans)
A hearty and flavorful Greek dish made with giant beans in a rich tomato sauce. Serve as a side or main course.
Ingredients
- β1 can (14.5 oz) giant beans (gigantes)drained and rinsed
- β2 tbsp aromatic olive oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 can (14.5 oz) canned diced tomatoes
- β2 tbsp tomato paste
- β1 cup beef broth
- βto taste freshly ground black pepper
- βto taste salt
- βchopped (optional) fresh parsley

Heat the olive oil in a large saucepan over medium heat.

Add the minced garlic and cook for an additional minute.

Add the canned diced tomatoes, tomato paste, beef broth, salt, and pepper.

Stir to combine and bring to a simmer.

Reduce heat to low and let sauce simmer for 20-25 minutes, stirring occasionally.
