Roasted Poblano Quesadilla
A simple and flavorful quesadilla filled with roasted poblanos, perfect for a quick and delicious meal. The smoky flavor of the roasted poblano pairs well with the melted cheese.
Ingredients

- β1 cup aromatic amazingly cheeseshredded
- β4 quesadillalarge
- β1 tablespoon oilvegetable
- βto taste salt
- βto taste pepper

1. Preheat the oven to 400Β°F (200Β°C).

2. Place the poblanos on a baking sheet and roast for 20-25 minutes, or until the skin is blistered and charred.

3. Remove the poblanos from the oven and let them cool down.

4. Once cool enough to handle, peel the skin off the poblanos and place them in a bowl.

5. Add the shredded cheese, salt, and pepper to the bowl and mix well.

6. Heat the oil in a large skillet over medium heat.

7. Place a quesadilla in the skillet and sprinkle some of the poblano mixture onto half of the tortilla.

8. Fold the tortilla in half to enclose the filling.

9. Cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

10. Flip the quesadilla and cook for another 2-3 minutes or until the other side is also crispy and the cheese is melted.
