Mexican Aubergine Quesadillas
A delicious and easy-to-make Mexican-inspired dish featuring crispy aubergine and melted cheese, wrapped inside a crunchy quesadilla.
Ingredients
- β1 a large aubergineabout 8 inches long
- β1 cup shredded mexican cheese blend
- β4 mexican tortillascorn or flour
- β1/4 cup mild salsaoptional
- β2 tbsp olive oil
- βto taste salt and pepper

1. Preheat a large pan over medium-high heat.

2. Slice the aubergine into 1/4-inch thick rounds.

3. Brush both sides of the aubergine slices with olive oil.

4. Place the aubergine slices in the pan and cook for 2-3 minutes per side, until crispy.

5. Meanwhile, warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

6. To assemble the quesadillas, lay a tortilla flat and sprinkle shredded cheese on half of the tortilla.

7. Add a few slices of crispy aubergine on top of the cheese.

8. Fold the tortilla in half to enclose the filling.

9. Cook the quesadilla in the pan for 2-3 minutes on each side, until the cheese is melted and the tortilla is crispy.
