Uruguayan-Style Poached Cod with Ceviche Garnish

- β2 Cod Fillets (6 oz)
- β1/2 cup Fresh Lime Juice
- β1/2 cup Red Onionthinly sliced
- β1/4 cup Fresh Cilantrochopped
- βto taste Salt
- βto taste Black Pepper
- β4 cups Water
- β2 tbsp White Vinegar

1. In a medium saucepan, combine water and white vinegar. Bring to a simmer over medium heat.

2. Reduce heat to low and add cod fillets. Poach for 8-10 minutes or until cooked through.

3. Meanwhile, mix lime juice, sliced red onion, and chopped cilantro in a small bowl.
