Classic Borscht
A traditional Russian beet soup, served with a dollop of sour cream.

Ingredients
- β2 cups, peeled and grated Beets
- β1 cup, peeled and grated Carrots
- β1 cup, shredded Cabbage
- β1 medium, chopped Onions
- β4 cups Beet broth
- β2 tablespoons Tomato paste
- β1 tablespoon Sugar
- β2 tablespoons Vinegar
- β1 cup (for serving) Sour cream
- β1/4 cup, chopped (for garnish) Fresh dill

Instructions

Heat oil in a large pot over medium heat.

Add the onions and cook until softened, about 5 minutes.

Add the carrots and beets, and cook for another 5 minutes.

Add the cabbage, beet broth, tomato paste, sugar, and vinegar.

Bring to a boil, then reduce heat to low and simmer for 20 minutes.
