Portuguese Bean Fritters
A delicious and crunchy Portuguese-inspired fritter recipe made with bean and mung bean sprouts. Perfect as a snack or side dish.
Ingredients
- β1 cup Mung bean sprouts
- β1 cup Canned black beansdrained and rinsed
- β1/2 cup 1/2 cup all-purpose flour
- β1/4 cup 1/4 cup grated onion
- β1 1 minced garlic clove
- β1/4 cup 1/4 cup chopped fresh cilantro
- β1/2 teaspoon 1/2 teaspoon salt
- β1/4 teaspoon 1/4 teaspoon black pepper
- β2 tablespoons 2 tablespoons olive oil
Instructions

In a large bowl, mash black beans using a fork or a potato masher.

Add flour, onion, garlic, cilantro, salt, and pepper to the bowl. Mix well.

Add mung bean sprouts to the bowl and mix until just combined.

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.

Using a 1/4 cup measuring cup, scoop the bean mixture into the skillet.

Flatten the mixture slightly with a spatula.

Cook for 3-4 minutes or until the edges start to brown.

Flip the fritters and cook for another 3-4 minutes or until golden brown.

Repeat with the remaining bean mixture, adding more oil as needed.
