Egyptian Roast Chicken
A flavorful roast chicken dish inspired by Egyptian cuisine. Aromatic spices and herbs add a rich, exotic flavor to this classic meal.
Ingredients
- ●1 whole chicken (1.5 kg) chickenpreferably organic
- ●1 tsp aromatic spicesa mix of cumin, coriander, and paprika
- ●1 tsp egyptian cuminavailable at most middle eastern grocery stores
- ●3-4 medium potatoes roast potatoespeeled and chopped
- ●2 tbsp olive oilto drizzle over the chicken
- ●1 large onion onionchopped
- ●3 cloves garlicminced
- ●to taste saltto season
- ●to taste black pepperto season
Instructions

Preheat oven to 220°C (425°F).

Rinse the chicken and pat dry with paper towels.

Season the chicken with salt, black pepper, and aromatic spices.

Heat 1 tbsp of olive oil in a large oven-safe skillet over medium-high heat.

Sear the chicken until golden brown on all sides, about 5-7 minutes.

Transfer the skillet to the preheated oven and roast for 45-50 minutes, or until the chicken reaches an internal temperature of 75°C (165°F).

While the chicken is roasting, toss the chopped potatoes with 1 tbsp of olive oil, salt, and pepper in a separate bowl.

Spread the potatoes out in a single layer on a baking sheet and roast in the oven for 20-25 minutes, or until golden brown.

Remove the chicken and potatoes from the oven and let rest for 10 minutes before serving.

Drizzle the juices from the skillet over the chicken and serve with the roasted potatoes.
