Grilled Lamb Satay
A traditional British dish with a twist, featuring marinated grilled lamb served with a side of aromatic peanut sauce.
Ingredients

- β1/2 cup Coconut milk
- β2 tablespoons Peanut butter
- β2 tablespoons Honey
- β2 tablespoons Soy sauce
- β2 inches Ginger
- β3 cloves Garlic
- β1/4 cup Peanuts
- β2 tablespoons Lime juice

In a blender or food processor, combine coconut milk, peanut butter, honey, soy sauce, ginger, and garlic. Blend until smooth.

Grill the lamb shoulder to an internal temperature of 145Β°F (63Β°C) for medium-rare.

Let the lamb rest for 5 minutes before slicing it into thin strips.

In a pan over medium heat, toast the peanuts until fragrant.

Add the peanut sauce to the pan and stir to combine with the peanuts.

Add the sliced lamb to the pan and toss to coat with the peanut sauce.
