Kenyan Lamb Wrap
A flavorful and spicy lamb wrap inspired by Kenyan cuisine, served with a side of aromatic and light accompaniments.
Ingredients
- β1 pound Lamb shoulderCut into thin strips
- β2 tablespoons Kenyan spice mixAvailable at most African markets or online
- β2 tablespoons Light olive oilFor brushing the lamb

- β4-6 WrapLarge flour tortillas
- β1 cup Greek yogurtFor serving
- β1 medium CucumberThinly sliced

Preheat a grill or grill pan to medium-high heat.

In a small bowl, mix together the Kenyan spice mix and 1 tablespoon of light olive oil.

Add the lamb strips to the spice mix and toss to coat.

Grill the lamb for 5-7 minutes per side, or until cooked to your desired level of doneness.

Let the lamb rest for 5 minutes before slicing it thinly.

Meanwhile, brush the wraps with the remaining 1 tablespoon of light olive oil.

Warm the wraps on the grill or in a dry skillet for 30 seconds on each side.
