Kenyan Beef Stew
A hearty stew with tender beef and aromatic spices, inspired by Kenyan cuisine. Perfect for a cold evening.
Ingredients
- β1 1/2 pounds beef stew meatcut into 1-inch cubes
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 tablespoons aromaticground
- β1 teaspoon roastedground
- β2 tablespoons tomato paste
- β2 cups beef broth
- β1 cup water

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes. Remove from pot.

Add onion and garlic and cook until softened, about 5 minutes.

Add aromatic and roasted, cooking for 1 minute.

Stir in tomato paste, cooking for 1 minute.

Add beef broth and water, scraping up browned bits.

Return beef to pot, cover, and bring to a boil.
