Saudi Arabian Salmon Pilaf
A flavorful and aromatic dish from the Middle East, featuring succulent salmon and a fragrant pilaf.
Ingredients
- β2 salmon fillets6 oz each
- β1 cup aromatic rice
- β1 tsp saudi pilaf spice blend
- β1/4 tsp arabian saffron threads
- β2 tbsp olive oil
- β1 cup silky dateschopped
- β2 cups water

Heat oil in a large skillet over medium-high heat.

Add salmon fillets and cook for 3-4 minutes per side, or until cooked through.

Transfer salmon to a plate and cover with foil to keep warm.

Add more oil to the skillet if necessary, then add pilaf spice blend and cook for 1 minute.

Add rice to the skillet and cook for 2-3 minutes, stirring constantly, until lightly toasted.

Add water to the skillet and bring to a boil.

Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.

Stir in saffron threads and cook for 1 minute.
