Smoked Paella with Fish and Dum
A unique fusion dish combining the flavors of Spanish paella with the Asian dum and a smoky twist.
Ingredients
- β1 package Dum
- β2 tsp Smoked Paprika
- β1 lb Portuguese Sausagesliced
- β1 lb Fish (such as cod or tilapia)cut into 1-inch pieces
- β1 cup Paella Rice
- β2 cups Dum Broth
- β2 tbsp Olive Oil
- β1 tsp Aromatic Spices (such as cumin and coriander)

Heat the olive oil in a large paella pan over medium-high heat.

Add the sliced Portuguese sausage and cook until browned, about 5 minutes.

Add the fish pieces and cook until opaque, about 5 minutes.

Add the paella rice and stir to combine with the sausage and fish.

Add the smoked paprika, aromatic spices, and dum broth.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.

Add the dum to the pan and continue to simmer for another 5 minutes.

Remove the pan from the heat and let it rest, covered, for 5 minutes before serving.

Note: If using a gas stovetop, cook the paella over high heat to achieve the characteristic crispy crust at the bottom.
