Jamaican Jerk Chicken Stew
A flavorful and aromatic stew made with Jamaican jerk seasoning and smoky chicken. This dish is perfect for a cozy evening.
Ingredients
- β1 1/2 pounds chicken
- β2 sprigs fresh thyme, 1 sprig fresh rosemary aromaticadd to pot for flavor
- β2 tablespoons jerk seasoning smoky
- β1 Scotch bonnet pepper, chopped (optional) jamaicanuse gloves when handling
- β1 large onion, chopped, 2 cloves garlic, minced, 1 large red bell pepper, chopped stew

Heat oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Add the onion, garlic, and red bell pepper to the pot and cook until the vegetables are softened, about 5 minutes.

Add the jerk seasoning, thyme, and rosemary to the pot and cook for 1 minute.

Add the chicken broth and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, until the chicken is cooked through, about 20 minutes.

Remove the chicken from the pot and shred it with two forks.
