Vietnamese Pork Noodle Soup
A hearty and comforting Vietnamese-inspired noodle soup made with tender pork, aromatic spices, and fresh herbs.
Ingredients
- β1 pound Pork shoulder
- β1 package Rice noodles
- β1 medium Onion
- β3 cloves Garlic
- β2 inches Ginger
- β1/4 cup Cilantro
- β2 tablespoons Fish sauce
- β1 tablespoon Soy sauce
- β1 tablespoon Brown sugar
- β1-2 teaspoons Vietnamese chili sauce (optional)
Instructions

Bring a large pot of water to a boil and cook the rice noodles according to the package instructions. Drain and set aside.

In a large Dutch oven or pot, heat 2 tablespoons of oil over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger to the pot and cook for an additional 1-2 minutes, until fragrant.

Add the pork shoulder to the pot and cook until browned on all sides, about 5-7 minutes.

Add the fish sauce, soy sauce, and brown sugar to the pot and stir to combine.

Add 4 cups of chicken broth to the pot and bring to a boil. Reduce the heat to low and simmer for 20-25 minutes, or until the pork is tender.

Remove the pork from the pot and shred or chop it into bite-sized pieces. Return the pork to the pot and stir to combine.

Add the cooked noodles to the pot and stir to combine.

Taste and adjust the seasoning as needed. If desired, add 1-2 teaspoons of Vietnamese chili sauce for added heat.

Serve the soup hot, garnished with cilantro and additional chili sauce if desired.

Optional: Serve with sliced fresh chilies, lime wedges, and pickled carrots for added flavor and texture.
