Creamy Paccheri Pasta Bake
A comforting, cheesy pasta bake with roasted Italian flavors.
Ingredients
- β8 oz paccheri pastawhole wheat or regular
- β1 can (14.5 oz) roasted tomatoesdrained and chopped
- β1 cup (shredded) emmentaler cheeseor other mild cheese
- β1 tsp italian seasoningdried basil, oregano, thyme
- β2 tbsp olive oilfor greasing baking dish
- β2 cloves (minced) garlicoptional
- β1/2 cup (shredded) parmesan cheese (optional)
Instructions

Preheat the oven to 375Β°F (190Β°C).

Cook the paccheri pasta according to package directions until al dente.

In a large saucepan, combine roasted tomatoes, emmentaler cheese, italian seasoning, and garlic (if using).

Stir over low heat until cheese is melted and sauce is smooth.

In a greased 9x13-inch baking dish, combine cooked pasta and tomato sauce.

Toss to coat pasta evenly.

Top with additional parmesan cheese (if using).

Cover with aluminum foil and bake for 20 minutes.

Remove foil and bake for an additional 5-10 minutes, or until top is lightly golden brown.
