Guajillo Beer Braised Short Ribs
A rich and flavorful Italian-inspired short ribs recipe utilizing guajillo peppers and beer. Perfect for a hearty winter dinner.

- β2 Guajillo peppers
- β1 cup Beer
- β1 cup (as a marinade ingredient) Paleo
- β2 tbsp Olive oil
- β2 cloves Garlic
- β1 tsp Salt
- β1 tsp Black pepper

Preheat the oven to 300Β°F (150Β°C).

Season the short ribs with salt and black pepper.

Heat the olive oil in a large Dutch oven over medium-high heat.

Sear the short ribs until browned on all sides, about 5 minutes per side.

Remove the short ribs from the pot and set aside.

Add the guajillo peppers to the pot and cook until fragrant, about 1 minute.

Add the beer and paleo to the pot, scraping up any browned bits from the bottom.

Return the short ribs to the pot and cover with a lid.

Transfer the pot to the preheated oven and braise for 2 1/2 hours, or until the meat is tender.

Remove the pot from the oven and let it cool slightly.

Strain the braising liquid through a fine-mesh sieve into a clean saucepan, discarding the solids.

Bring the braising liquid to a simmer over medium heat and cook until reduced by half, about 10 minutes.
