Venezuelan Bean Soup
A hearty and comforting soup originating from Venezuela, made with a variety of ingredients and spices.
Ingredients
- β1 cup Venezuelan bean soup mix
- β1 bunch Bitter leafy greenssuch as kale or collard greens
- β1/2 cup Crumbly cheesesuch as queso fresco
- β1 medium Diced onion
- β2 cloves Minced garlic
- β1 can Canned diced tomatoes
- β4 cups Vegetable broth
Instructions

Heat the oil in a large pot over medium heat.

Add the diced onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the Venezuelan bean soup mix and cook according to package instructions.

Add the diced tomatoes, vegetable broth, and bitter leafy greens.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
