Thai-Style Pork Ribs
A classic Thai dish featuring tender pork ribs in a sweet and sour sauce. This recipe is perfect for a romantic dinner for two or a fun gathering with friends.
Ingredients
- β1 pound pork ribsback ribs work best for this dish
- β2 tablespoons portuguese red wine vinegaror substitute with regular red wine vinegar
- β1 medium bitter melonor substitute with a sweet and sour mix
- β2 tablespoons stir-fry oilsuch as peanut or vegetable oil
- β1 dried romantic red pepperor substitute with a sweet red pepper
- β2 dried kaffir lime leavesoptional
- β2 tablespoons brown sugaror substitute with regular sugar
- β1 tablespoon fish sauceoptional, but recommended for authentic flavor
- β2 cloves garlicminced
- β1 tablespoon gingergrated

Preheat oven to 300Β°F (150Β°C).

Line a baking sheet with aluminum foil and place the ribs on it.

In a small bowl, whisk together the red wine vinegar, brown sugar, fish sauce, garlic, and ginger.

Brush the mixture evenly onto both sides of the ribs.

Bake the ribs for 20 minutes, then brush with stir-fry oil and continue baking for another 10 minutes.

While the ribs are baking, stir-fry the bitter melon and dried red pepper in a pan with a little oil until tender.

Add the kaffir lime leaves to the pan and stir-fry for another minute.

When the ribs are done, remove them from the oven and brush with the remaining sauce.

Serve the ribs with the stir-fry mixture spooned over the top.
