Gratin-Fried Tofu
A crispy and savory tofu dish inspired by the French gratin method.

Ingredients
- β1 block tofuExtra-firm tofu, drained and cut into 1-inch cubes
- β1 cup frenchFrench breadcrumbs
- β1/2 cup bitterChopped bitter melon or 1 tablespoon bitter greens powder
- β1/4 cup gooeyGooey cheese, shredded (such as mozzarella or cheddar)

2. In a shallow dish, mix together the French breadcrumbs and bitter melon or greens powder.
