Silky Stir Fry with Bitter Ginger
A quick and easy stir fry made with silky and bitter notes, perfect for a weeknight dinner.
Ingredients

- β2 romantic (bell) peppers
- β1 bunch bitter (bok choy)
- β1 medium german (potatoes)peeled and diced
- β2 tbsp stir (soy sauce)
- β1 tbsp fry (vegetable oil)
Instructions

Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat.

Add the diced potatoes and cook until they start to brown, about 5 minutes.

Add the sliced ginger and cook for another minute.

Add the bell peppers and bok choy, and cook until the vegetables are tender-crisp, about 3-4 minutes.

In a small bowl, whisk together the soy sauce and a pinch of salt. Pour the sauce over the vegetables and stir to combine.
