Slovakian Corn Fritters with Mozzarella
A crispy Slovakian-inspired corn fritter filled with melted mozzarella cheese, perfect as a snack or side dish.
Ingredients
- β1 cup cornfresh or frozen
- β1/2 cup slovakianall-purpose flour
- β1/2 cup mozarella cheeseshredded
- β1 arepacornmeal flatbread
- β1 egg filledbeaten
- β1/4 cup withmilk

Preheat the oven to 375Β°F (190Β°C).

In a large bowl, whisk together the cornmeal, flour, and a pinch of salt.

In a separate bowl, whisk together the egg, milk, and a splash of water.

Add the wet ingredients to the dry ingredients and stir until just combined.

Fold in the shredded mozzarella cheese.

Using your hands, shape the dough into 4-6 patties, depending on desired size.

Heat about 1/2 inch (1 cm) of oil in a large skillet over medium-high heat.
