Australian Braised Beef
A hearty beef dish originating from Australia, slow-cooked in a rich red wine sauce.
Ingredients
- β2 pounds beef short ribs
- β1 medium onion
- β3 cloves garlic
- β1 cup red winefull-bodied
- β2 cups beef broth
- β2 tablespoons tomato paste
- β2 tablespoons all-purpose flour
- β2 tablespoons butterunsalted
- β2 sprigs fresh thyme

Preheat oven to 300Β°F (150Β°C).

Season the short ribs with salt and pepper.

In a large Dutch oven, heat 1 tablespoon of butter over medium-high heat.

Sear the short ribs until browned on all sides, about 5 minutes.

Remove the ribs from the pot and set aside.

Reduce heat to medium and add the remaining 1 tablespoon of butter.

Add the sliced onion and cook until caramelized, about 10 minutes.

Add the minced garlic and cook for 1 minute.

Add the red wine, beef broth, tomato paste, and flour.

Stir to combine and bring to a simmer.

Return the short ribs to the pot and cover with a lid.

Transfer the pot to the preheated oven and braise for 2 1/2 hours.
