Thai Braised Chuck Roast
A tender and flavorful Thai-inspired braise made with chuck roast, served with steamed vegetables.
Ingredients
- β2 lbs chuck roast
- β2 tbsp fish sauce
- β2 tbsp soy sauce
- β1 tbsp brown sugar
- β3 cloves garlicminced
- β1-inch piece gingersliced
- β1 piece star anise
- β2 leaves bay leaves
- β1 can coconut milk
- β2 cups water

Preheat oven to 300Β°F (150Β°C).

Season the chuck roast with salt and pepper.

Heat oil in a Dutch oven over medium-high heat. Sear the chuck roast until browned on all sides.

Remove the roast from the pot and set aside.

Add the minced garlic and sliced ginger to the pot and cook until fragrant.

Add the fish sauce, soy sauce, brown sugar, star anise, and bay leaves to the pot.

Return the chuck roast to the pot and pour in the coconut milk and water.

Bring the mixture to a boil, then cover the pot and transfer it to the preheated oven.

Braise the chuck roast for 2 1/2 to 3 hours, or until tender.
