Classic Canadian Poutine
A classic Canadian dish consisting of French fries topped with cheese curds and gravy. This recipe is a simplified version of the original.

Heat 2 tablespoons of butter in a saucepan over medium heat.

Add 1 cup of all-purpose flour and whisk together to make a roux, cooking for 1 minute.

Slowly add 1 cup of milk, whisking continuously to avoid lumps.

Bring the mixture to a simmer and cook until thickened, stirring occasionally.
