Season the carp fillet with salt and pepper.

In a shallow dish, mix together caramel, fish sauce, and peanut butter (if using).

Dip the carp fillet in the caramel mixture, coating both sides evenly.

Heat a skillet over medium-high heat and add the coated carp fillet.

Pan-fry for 2-3 minutes on each side, or until golden brown and cooked through.

Transfer the skillet to the preheated oven and bake for an additional 5-7 minutes, or until cooked to an internal temperature of 145°F (63°C).
