Lentil Tagine with Mediterranean Flair

- β1/2 cup caramelized onions
- β2 tablespoons olive oil
- β2 teaspoons mediterranean spice blend
- β1 teaspoon ground cumin
- β1 teaspoon ground coriander
- β1/2 teaspoon salt
- β1/4 teaspoon black pepper
- β4 cups water

Heat the olive oil in the bottom of a clay pot or Dutch oven over medium heat.
