Caramelized Courgette Stir Fry
A quick and easy stir fry dish featuring caramelized courgette as the star, paired with Norwegian salmon for a delicious and healthy meal.
Ingredients
- β2 medium Courgettepeeled and sliced
- β4 x 120g Salmon fillets (Norwegian)skin removed
- β2 tbsp Coconut oilfor frying
- β2 cloves Garlicminced
- β1-inch piece Gingergrated
- β2 tbsp Soy saucelow-sodium
- β1 tsp Honeyoptional

Heat 1 tbsp of coconut oil in a large frying pan or wok over medium-high heat.

Add the sliced courgette and cook for 3-4 minutes, or until browned and caramelized.

Remove the courgette from the pan and set aside.

Add the remaining 1 tbsp of coconut oil to the pan and cook the salmon fillets for 3-4 minutes per side, or until cooked through.

Remove the salmon from the pan and set aside with the courgette.

In the same pan, add the minced garlic and grated ginger and cook for 1 minute, or until fragrant.

Add the soy sauce and honey (if using) to the pan and stir to combine.

Return the courgette and salmon to the pan and toss to coat with the sauce.

Serve the stir fry hot, garnished with sliced green onions and a sprinkle of sesame seeds (optional).

Cook's tip: For an extra crispy courgette, try dusting it with a little cornstarch before cooking.
