- β1 tablespoon Vegan palm sugarYou can substitute with coconut sugar
- β1-inch piece GingerGrate it before using
- β3 cloves GarlicMince it before using
- β1 tablespoon Vegan soy sauceMake sure it's free from animal products

1. Cook the pad see ew noodles according to package instructions.

2. In a blender or food processor, blend the tiger nuts, charred vegetables, tamarind paste, fish sauce, palm sugar, ginger, and garlic until you get a sticky paste.

3. Heat the oil in a wok or large skillet over medium-high heat.

4. Add the blended paste to the wok and stir-fry for 2-3 minutes.
