Filipino-Style Ginataang Bilo-Bilo
A traditional Filipino dessert made with sweet bilo-bilo balls, coconut milk and various fruits. This recipe is a twist on the classic by adding a caramelized sugar crust to give it a crunchy texture.
Ingredients
- β1 cup Sweet potato bilo-bilo ballsYou can use store-bought or homemade bilo-bilo balls
- β1 1/2 cups Coconut milkFull-fat coconut milk for a richer flavor
- β1/4 cup Date syrupOr substitute with honey or maple syrup
- β2 tablespoons Charred sugarTo make charred sugar, caramelize 1/4 cup of sugar in a pan over medium heat until golden brown
- β1 cup Crispy plantainsSlice plantains thinly and fry until crispy
- β1 cup Night market-style jackfruitCanned jackfruit or use fresh jackfruit and cook until tender

In a large saucepan, combine coconut milk, date syrup, and charred sugar. Heat over medium heat, stirring constantly until the sugar has dissolved.

Add the bilo-bilo balls to the saucepan and cook for 5 minutes, or until they have absorbed most of the liquid.

Add the crispy plantains and night market-style jackfruit to the saucepan. Cook for an additional 2-3 minutes, until the flavors have melded together.

Transfer the mixture to individual serving bowls and serve warm or at room temperature.
