Braised Brazilian Ribs with Charred Onions
Fall-off-the-bone tender ribs in a rich, charred onion and dense Brazilian pepper sauce.
Ingredients
- β2 pounds beef short ribs
- β2 cups chicken broth
- β1 cup red wine
- β1 cup charred onions
- β2 peppers dense Brazilian peppers
- β1/4 cup fromageshredded or crumbled
- β1 cup fraischopped fresh cilantro

Preheat oven to 300Β°F (150Β°C).

Season the short ribs with salt and pepper. Sear in a hot skillet until browned on all sides.

Transfer the ribs to a Dutch oven or heavy pot. Add the chicken broth, red wine, and charred onions.

Braise the ribs in the preheated oven for 2 1/2 to 3 hours, or until tender.

Remove the ribs from the pot and let cool slightly. Strain the braising liquid and discard the solids.

Return the ribs to the pot and stir in the dense Brazilian peppers and fromage.

Simmer the ribs in the pot over low heat for 10-15 minutes, or until the sauce has thickened.
