Charred Pepper Penne Pasta
A flavorful and colorful pasta dish featuring charred peppers, onions, and rigate penne.
Ingredients
- β2 charred peppersany color
- β1 medium onionchopped
- β3 cloves garlicminced
- β8 oz penne rigatedried
- β2 tbsp olive oilextra virgin
- βto taste saltflaky
- βto taste black pepperfreshly ground
- β1/4 cup grated Parmesan cheeseoptional

1. Preheat the oven to 425Β°F (220Β°C).

2. Place the charred peppers on a baking sheet and roast in the oven for 15-20 minutes, or until tender.

3. In a large skillet, heat the olive oil over medium heat.

4. Add the chopped onion and cook until translucent, about 5 minutes.

5. Add the minced garlic and cook for 1 minute.

6. Add the cooked penne rigate to the skillet and toss with the onion and garlic mixture.

7. Remove the charred peppers from the oven and let cool slightly.

8. Peel the peppers and slice them into strips.

9. Add the sliced peppers to the skillet with the penne and toss to combine.

10. Season with salt and black pepper to taste.
