Charred Ricotta Foldover
A light and airy folded pastry filled with a creamy ricotta cheese mixture, charred to perfection.
Ingredients
- β1 1/2 cups all-purpose flour
- β1 cup ricotta cheese
- β1/4 cup granulated sugar
- β2 large eggs
- β1 tsp vanilla extracthigh-quality extract for best flavor
- β2 tbsp confectioners' sugar
- β1 tsp charred sugar (optional)

Preheat oven to 375Β°F (190Β°C).

In a medium bowl, whisk together flour, sugar, and charred sugar (if using).

In a large bowl, whisk together ricotta cheese, eggs, and vanilla extract until well combined.

Add the dry ingredients to the ricotta mixture and mix until just combined.

Fold the dough in half lengthwise and cut into 6 equal pieces.

Roll each piece into a ball and then flatten slightly into a disk.

Place the disks on a baking sheet lined with parchment paper.

Bake for 18-20 minutes, or until the tops are golden brown.
