Braised Pork Jjigae
A mexican fusion dish combining the spicy flavors of jjigae with the rich flavors of braised pork.
Ingredients
- ●1.5 lbs pork shouldercut into 1-inch cubes
- ●2 tsp chinese chili flakesadjust to taste
- ●2 charred jalapeñosseeded and chopped
- ●1 cup molten cheddarshredded
- ●1 cup canned diced tomatoesdrained
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●1 tsp cuminground
- ●2 tbsp lime juicefreshly squeezed
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add pork and cook until browned, about 5 minutes.

Remove pork from pot and set aside.

Add onion and garlic to pot and cook until onion is translucent, about 5 minutes.

Add cumin, chili flakes, and charred jalapeños to pot and cook for 1 minute.

Add canned diced tomatoes, browned pork, and lime juice to pot.

Stir to combine, then bring to a simmer.

Transfer pot to oven and braise for 2 hours, or until pork is tender.

Stir in molten cheddar and cook until melted and bubbly.

Serve hot, garnished with cilantro and lime wedges.
