Croatian Mincemeat Tagine
A hearty, slow-cooked tagine made with Croatian mincemeat, charred vegetables, and a blend of spices.

Ingredients
- β1 cup Croatian mincemeathomemade or store-bought
- β1 medium Charred eggplantcharred on the grill or in the oven
- β1/4 cup Shattering pomegranate seedsfresh or dried
- β2 tsp Tagine spice blendor to taste
- β2 tbsp Olive oilfor cooking
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 tsp Cuminground
- β1 tsp Paprikasweet or smoked

Instructions

Heat oil in a large Dutch oven over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic, cumin, and paprika. Cook for 1 minute.

Add charred eggplant, Croatian mincemeat, and tagine spice blend. Stir to combine.

Add 1 cup of water and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes.

Stir in pomegranate seeds and cook for an additional 5 minutes.
