Indian Lentil Stew
A flavorful and nutritious Indian-inspired stew made with red lentils, onions, and spices. Perfect for a cold winter night.
Ingredients
- β1 cup red lentilsrinsed and drained
- β1 medium onionchopped
- β3 cloves garlicminced
- β1/4 cup cheeseshredded (optional)
- β2 cups stewvegetable broth
- β2 tablespoons oilvegetable oil
- β1 teaspoon cumin powderground
- β1 teaspoon coriander powderground
- β1/2 teaspoon turmeric powderground
- βto taste salt

Heat oil in a large pan over medium heat.

Add onion and garlic and cook until softened, about 3-4 minutes.

Add cumin, coriander, and turmeric and cook for 1 minute.

Add lentils and stir to coat with spice mixture.

Add stew and bring to a boil.

Reduce heat to low and simmer for 20-25 minutes, or until lentils are tender.

Stir in cheese (if using) and season with salt to taste.
