Cheesy Mexican Stir Fry
A quick and easy stir fry filled with the flavors of Mexico, topped with melted cheese.
Ingredients
- β1 cup, shredded cheese
- β1 packet, taco seasoning mexican
- β1 tablespoon, shredded cheese cheesy
- β2 tablespoons, vegetable oil stir
- β1 medium, sliced onion
- β1 medium, sliced bell pepper
- β1 medium, diced tomato
- β1 can, black beans, drained and rinsed beans
- β6-8, corn tortillas tortilla

1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

2. Add the sliced onion and bell pepper and cook until tender, about 5 minutes.

3. Add the diced tomato and cook for an additional 2 minutes.

4. Add the black beans, taco seasoning, and stir to combine.

5. Reduce heat to low and cook for 2-3 minutes.

6. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

7. Assemble the stir fry by placing a portion of the vegetable mixture onto a tortilla and topping with shredded cheese.

8. Fold the tortilla in half to enclose the filling and cook for an additional 30-60 seconds, until the cheese is melted.
