Caramelized Chicken Halo-Halo
A refreshing and unique Filipino-inspired dessert. Caramelized chicken breasts are used in place of traditional toppings.
Ingredients
- β1 cup chewy meringue cookiescrushed
- β1 caramelized chicken breastscooked and diced
- β1 cup hilaw na niyogshaved coconut
- β1/2 cup ube halayapurple yam jam
- β1 cup leche flancaramel sauce
- β1 cup sabaplantain fruit
- β1 cup kaongpalm fruit
Instructions

In a large bowl, combine crushed meringue cookies, shaved coconut, and purple yam jam.

In a separate bowl, whisk together caramel sauce and leche flan.

Add diced caramelized chicken breasts to the bowl with the caramel sauce and leche flan mixture.

Combine the two mixtures and stir well.

Add palm fruit and plantain fruit to the mixture and stir gently.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours.

Scoop the mixture into individual serving cups.

Garnish with additional meringue cookies and shaved coconut, if desired.
