British Shrimp Soup
A hearty and comforting British-style shrimp soup that's perfect for a chilly evening. This recipe combines the flavors of the UK with the sweetness of shrimp.
Ingredients

- β1 cup chewycrusty bread
- β1/4 cup festivechopped parsley
- β4 cups soupfish stock
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup milkheavy cream or half-and-half

Melt 2 tablespoons of butter in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the fish stock, shrimp, and chopped parsley. Bring to a boil, then reduce heat and simmer for 5-7 minutes, or until the shrimp are pink and cooked through.

Use an immersion blender to puree the soup until smooth, or allow it to cool and puree it in a blender.

Return the soup to the saucepan and add the heavy cream or half-and-half. Stir to combine and cook over low heat until warmed through.
