Vietnamese Tofu Lasagne
A fusion of Vietnamese and Italian flavors in a unique lasagne dish. Layers of tender tofu, rich lasagne sauce, and fresh herbs come together to create a delicious and satisfying meal.
Ingredients
- β250g Tofupressed and drained
- β8-10 sheets Lasagne sheetsfresh or dried
- β500g Vietnamese lasagne saucehomemade or store-bought
- β200g Chewy rice noodleschopped and toasted
- βhandful Midnight herbschopped fresh herbs (such as Thai basil, mint, cilantro)
- βto taste Salt
- βto taste Black pepper

Preheat oven to 180Β°C (350Β°F).

Cook lasagne sheets according to package instructions. Drain and set aside.

Prepare Vietnamese lasagne sauce by heating it in a pan over medium heat.

Press and drain tofu. Chop into small cubes and set aside.

In a large bowl, combine cooked lasagne sheets, tofu, and Vietnamese lasagne sauce.

Stir in chopped midnight herbs, salt, and black pepper.

Transfer the mixture to a baking dish and top with toasted chewy rice noodles.

Bake in the preheated oven for 25-30 minutes, or until the lasagne is hot and bubbly.
