Cranberry Pryazhki Cheesecake Bars
A gluten-free twist on a classic Russian dessert, with a chewy twist from the cranberry sauce.
Ingredients
- β1 1/2 cups Pryazhki
- β1 cup Cranberry sauce
- β1/2 cup Sugar
- β1/2 cup Unsalted butter
- β1 cup Granulated sugar
- β2 Large eggs
- β1 tsp Vanilla extract
- β1/4 tsp Ground cinnamon
- β1/4 tsp Salt
- β1/2 cup Chewy chocolate chips

Preheat oven to 350Β°F (180Β°C).

Prepare a 9x9 inch baking dish with parchment paper.

In a medium bowl, whisk together sugar, unsalted butter, granulated sugar, eggs, vanilla extract, cinnamon, and salt.

Add the pryazhki to the bowl and mix until well combined.

Press half of the mixture into the prepared baking dish.

Spread the cranberry sauce over the mixture.

Add the remaining mixture on top of the cranberry sauce.

Bake for 35-40 minutes, or until the edges are golden brown.

Remove from oven and sprinkle with chewy chocolate chips.
