Spicy Padron Pepper Curry
A flavorful and aromatic curry made with sweet Padron peppers, perfect for a weeknight dinner. The combination of Southern spices and Thai curry paste gives this dish a unique twist.

- β2 tablespoons Thai red curry paste
- β1 teaspoon Southern-style curry powder
- β2 tablespoons chewy rice vinegar
- β1 can (14 oz) curryCoconut milk
- β1/2 teaspoon pepperBlack pepper
- β1 tablespoon peanut oil
- β1/4 cup water

Heat the peanut oil in a large saucepan over medium-high heat.

Add the Padron peppers and cook for 2-3 minutes, until they start to soften.
