Chewy Vietnamese Cookies
Soft and chewy cookies with a hint of Vietnamese flavors. Perfect as a snack or dessert.
Ingredients
- β1 cup Unsalted butter
- β3/4 cup White granulated sugar
- β1/2 cup Brown sugar
- β2 Large eggs
- β1 tsp Vanilla extract
- β2 cups All-purpose flour
- β1 tsp Baking soda
- β1/4 tsp Salt
- β1 tsp (optional) Chewy
- β1 tsp (optional) Vietnamese coffee powder

Preheat the oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.

Whisk together the butter and sugars until light and fluffy.

Beat in the eggs one at a time, followed by the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually mix the dry ingredients into the wet ingredients until a dough forms.

If desired, stir in the chewy and Vietnamese coffee powder.

Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving 2 inches of space between each cookie.

Bake for 10-12 minutes or until the edges are lightly golden.

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
