Spicy Chickpea Salad
A refreshing and healthy salad made with chickpeas, perfect for a light lunch or snack.
Ingredients
- β1 can (14.5 oz) chickpea
- β1 medium, sliced cucumber
- β1/2 medium, thinly sliced red onion
- β1 medium, diced tomato
- β2 tbsp lemon juice
- β1 tbsp olive oil
- β1 tsp garlic powder
- β1 tsp cumin
- βto taste salt
- βto taste black pepper

Drain and rinse the chickpeas.

In a large bowl, combine the chickpeas, cucumber, red onion, and tomato.

In a small bowl, whisk together the lemon juice, olive oil, garlic powder, cumin, salt, and black pepper.

Pour the dressing over the chickpea mixture and toss to combine.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, give the salad a good stir and adjust the seasoning as needed.
