Bhuna Chicken Fiesta
A spicy and flavorful chicken dish with a burst of citrus, served with a twist of traditional Indian bhuna spices.
Ingredients
- β500g chicken breastboneless, cut into bite-sized pieces
- β4 tablespoons bhuna curry pasteadjust to taste
- β1 tablespoon fiesta seasoningadjust to taste
- β2 tablespoons orange juicefreshly squeezed
- β1 tablespoon citrus zestfrom 1 orange
- β2 tablespoons olive oilfor cooking
- β1 teaspoon saltadjust to taste
- β1/2 teaspoon pepperadjust to taste
- β1/4 cup chopped fresh cilantrofor garnish
- β1 cup burst cherry tomatoeshalved

1. Heat 1 tablespoon of olive oil in a large pan over medium-high heat.

2. Add the chicken breast pieces and cook until browned, about 5-6 minutes.

3. Remove the chicken from the pan and set aside.

4. In the same pan, add the remaining 1 tablespoon of olive oil.

5. Add the bhuna curry paste and fiesta seasoning. Cook for 1-2 minutes, until fragrant.

6. Add the orange juice and citrus zest. Stir to combine.

7. Return the chicken to the pan and stir to coat with the sauce.

8. Reduce heat to medium-low and simmer for 10-12 minutes, until the chicken is cooked through.

9. Add the chopped cilantro and burst cherry tomatoes. Stir to combine.
